10-minute Pork Chops with Orange Glaze

Taken from Fuss-Free Suppers by Jenny Kay and Elinor Storkey.

The woody flavours of the meat and citrusy zing of the orange glaze combine beautifully in this succulent dish.

INGREDIENTS:

2 Tbsp. olive oil

4 smoked kassler chops

For the orange glaze:

3 to 4 oranges

A little water

3 Tbsp. honey

2 Tbsp. soft brown sugar

1 tsp. soy sauce

1 tsp. wholegrain mustard

METHOD:

1. Heat the oil in a saucepan and fry the chops for 4 to 5 minutes on each side until cooked through. Set aside the pan.

2. To make the glaze, remove the rind from one of the oranges using a zester. Place in a saucepan with a little water and boil for 5 minutes. Strain, reserving the rind.

3. Squeeze 1 cup juice from the oranges and combine with the honey, sugar, soy sauce and mustard in the saucepan. Bring to the boil and then simmer for 5 minutes. Add the rind and remove from the heat.

4. Pour the glaze over the chops in the saucepan and reheat. Serve immediately with a green salad.

Serves 4.
