Evita's Bossie Sikelela by Evita Bezuidenhout

Evita's Bossie Sikelela by Evita Bezuidenhout

Courtest of showcook.com: "Evita Bezuidenhout, following the great success of her first delicious cookbook, is with us once again. The icon of the nation presenting her recipes for dishes that she has experienced on her travels in South Africa and the world.

A book that is full of fun and humour as well as interesting facts. See Tannie’s tips on health for instance, ‘Eat a fresh nasturtium leaf as the first sign of a cold or sore throat.’ (That’s jolly good advice!) Evita spending a night with a friend on a farm outside Calitzdorp where Johannatjie makes her own tapanade and barters vegetables for olives in Prince Albert. And of course how could she possibly do without a luxurious safari on a farm which belonged to her dear late husband, Hansie’s family in Hoedspruit where they had an Afrikaner cocktail watching the flaming red sunset through the thorn trees. Travel on with Evita to The Orange Farm where she spent part of her school holidays with Oom Septie."

Below is one of the delectable recipes found in the book!

Lemon Cake.

Ingredients:

170 g soft butter
170 g sugar
120 g finely ground almonds
50 g almond flakes
1 tsp vanilla essence
2 eggs
zest and juice of 1 lemon
70 g fine semolina
2 tsp baking powder

For the syrup:
Zest and juice of 2 lemons
50 g sugar
2 tbsp water

Method:

Preheat the oven to 180°C and butter a springform cake tin. Cream the butter and sugar until light and creamy. Add the remaining ingredients and mix well. Pour into the tin and bake for 25 minutes. When the cake is cooked, a skewer inserted into the centre will come out clean. To make the syrup, simmer the lemon zest and juice with the sugar and water in a small saucepan for 10 minutes. Once the cake has cooled, remove from the tin and place on a serving plate. Prick the top with a fork and pour over the syrup. Serve warm or cold with pouring cream.
