Sesame-coated chicken strips

Sesame-coated chicken strips

Taken from Simple, Fabulous Lunchbox Ideas by Leanne Katzenellenbogen.

INGREDIENTS

  • 4 tsp honey
  • 4 tsp Dijon mustard
  • 4 tsp olive oil
  • 1⁄2 cup low-GI breadcrumbs
  • 1⁄4 cup sesame seeds
  • 1 x 250 g skinless chicken breast
  • olive oil spray

METHOD

  1. Preheat the oven to 180°C.
  2. Mix the honey, mustard and olive oil.
  3. In a separate bowl, mix the breadcrumbs and sesame seeds.
  4. Cut the chicken breast into strips about 2 cm thick.
  5. To coat, first dip the chicken strips into the honey-mustard mixture and then into the breadcrumb mixture; coat well.
  6. Spray the crumbed strips with olive oil spray and place the strips on a baking tray lined with baking paper.
  7. Bake for 15 minutes.

Makes 6–8 chicken strips
